i wanted to share some pics from the last couple of days ... and an easy recipe for some pretty good homemade biscuits (thank you, kripalu cookbook!) these went great with the veg/lentil/barley soup you see here (thanks AGAIN, ayurvedic cookbook!).



i'm snuggling with my cats, lighting a candle, and knitting a gift. i'm contemplating going on a reading sprint again ... I want to read Stones Into Schools and Crime and Punishment .... so much to read, so little time ... sigh. I will have to build more into my weekends. Does anyone else think the world would greatly benefit from four-day work weeks? I do, I really do.

Herb Biscuits



2 cups whole-wheat pastry flour (I used amaranth flour and it tasted great, but i would NEVER do that again because it's .... WHOOPS ... ridiculously expensive. forgot, haven't bought it in a while)

2 1/2 cups unbleached white flour (i use white spelt)

2 tsp sea salt

3 3/4 tsp baking powder

1 tsp ea dried basil, thyme, oregano, marjoram

2 tsp garlic powder

3/4 cup canola oil

2 cups apple cider (i used apple juice)

Preheat oven to 350F ... oil two baking sheets ...

In a bowl, mix together all the dry ingreds. In another bowl, mix oil and cider/juice. Add wet to dry with a spatula and mix until well combined.

Drop the dough by tablespoonful (*mine were a lot bigger .... makes 18 to 20 on 2 sheets) onto the sheets and bake for 12-15 min, or until the bottoms are brown. Let cool for 10 minutes on a wire rack or serve warm.

these are reaaaaaaaaaaaaaaaaaaaalllly good with vegan earthbalance butter melted into the warmth!!! and SUPER easy to make/freeze (if only i knew how to properly freeze bread stuff ... any tips?)

tonight:: pesto from leftovers: collards, broccoli, parsley, green chilies (yes!), celery, onions ... plus the usual suspects of nutritional yeast, salt, pepper, olive oil, and walnuts ... a bit crunchier than usual but still good!

p.s. green smoothies ARE REALLY good!! here's mine: collards, hemp protein, flax seeds, maple syrup drizzle, frozen peaches, apple juice. thanks for the idea, heather! fills me for several whole hours ....

  2. 'twas! and thanks to those fashionista blogs you posted ... i've just been drooling over their clothes for an hour, wishing i could afford stuff from j. crew and anthropologie lol!! maybe their clearance sections are calling my names ... yes ... i hear them now! lol.
